Introduction – Makhana Grading
If you are a wholesaler, exporter, or a brand owner buying Makhana (Fox Nuts) in bulk, you know the feeling.
You receive a fantastic sample from a Makhana Supplier. The pops are huge, round, and crunchy. You place a large order. But when the truck arrives at your warehouse and you open the first sack, your heart sinks.
The stock looks nothing like the sample. It’s a mix of small sizes, broken pieces, and soft nuts.
Welcome to the “Wild West” of the Makhana trade.
Because Makhana is a natural agricultural produce, consistency is hard to achieve. Unfortunately, many traders exploit this by using vague grading terms to boost their margins at your expense.
At Mithila Kisan Utpadak Sangathan (An FPO with Makhana as Primary Produce), located right at the source in Bihar, we believe that long-term business is built on trust, not tricks. In this post, we are pulling back the curtain on the reality of Makhana grading and what you need to know to protect your business.
1. The “Suta” System Decoded: The Industry Standard
Before we discuss the tricks, let’s establish the truth. In the wholesale markets of Bihar, Makhana is graded by size using a traditional measure called the “Suta.”
A Suta is roughly equivalent to 3.175 mm (1/8th of an inch). When graders talk about “6 Suta Makhana,” they are referring to the diameter of the popped nut.
Here is the standard grading breakdown that honest makhana suppliers use:
- 7+ Suta (Super Jumbo / Export Grade):
- Size: approx. 22mm and above.
- The Truth: This is rare stock. It commands the highest premium because it’s huge, fluffy, and has the best visual appeal for premium retail packing.
- 6 Suta (Bold / Premium Grade):
- Size: approx. 19mm – 22mm.
- The Truth: This is the gold standard for high-quality domestic brands. It offers a great balance of size and crunch.
- 5 Suta (Medium / Standard Grade):
- Size: approx. 16mm – 19mm.
- The Truth: The most common commercial grade. Good for flavored snacks where huge size isn’t the priority, but cost is.
- 4 Suta & Below (Churri / Murra):
- Size: Below 16mm, often including broken or half-popped pieces.
- The Truth: Used primarily for grinding into powder, animal feed, or very low-cost local snacks.
2. The Dirty Tricks: How Makhana Suppliers Boost Margins
If the grading system is so clear, why is there so much confusion? Because unethical Makhana suppliers manipulate it. Here are the three most common tricks in the book:
Trick #1: The “Mixing Game” (Adulteration by Size)
This is the most common malpractice. A Makhana supplier will quote you for “6 Suta Premium,” but what they actually ship is a blend.
- The mix: They might take 60% of real 6 Suta stock and mix in 40% of cheaper 5 Suta stock.
- The result: To an untrained eye, it looks okay. But when you pack it, your customers will notice the inconsistent sizes. You paid premium prices for standard goods.
Trick #2: The “Moisture Trap” (Selling Water)
Makhana is very light; you are buying volume. Its biggest enemy is moisture.
- The trick: Unethical traders will intentionally under-dry the Makhana or store it in humid conditions before weighing.
- The result: You end up paying premium Makhana rates for water weight. Furthermore, this high-moisture stock will go stale or develop fungus (mold) within weeks of reaching your warehouse.
Trick #3: The “Visual Illusion” (Chemical Bleaching)
Natural Makhana is creamy white or slightly off-white. It is rarely stark, snow-white.
- The trick: To hide age, yellowing, or imperfections, some processors use chemical bleaching agents to make the stock look pristine white.
- The result: A chemically treated product that may have a compromised taste and does not align with the “natural, healthy” image of Makhana.
3. The Mithila FPO Difference: Grading with Integrity
As a Farmer Producer Organization, our mandate is different. We are owned by the farmers of Mithila. Our reputation is tied to the geographical integrity of our region.
When you source from mithilafpo.in, here is how we handle grading:
- Source Separation: We segregate the raw nuts (guria) by size before popping. Better raw material leads to more uniform popped Makhana.
- Mechanical + Manual Grading: We use mechanical graders to separate the bulk by size, followed by a manual quality check to remove pieces with black shells (hard spots) or defects.
- Transparency: If you order 6 Suta, you get 95%+ uniformity of 6 Suta. We don’t mix grades to increase our profits.
- Moisture Control: Our stock is sun-dried and tempered to the perfect moisture level for the crispest “snap,” ensuring long shelf life.
4. A Buyer’s Checklist: How to Protect Yourself
Whether you buy from us or someone else, use this checklist before finalizing a bulk order:
- ✅ Define the “Suta” in the Contract: Don’t just write “Premium Makhana” on the Purchase Order. Write “6 Suta Grade (19mm-22mm).”
- ✅ Demand a “Pre-Shipment” Sample: Don’t rely on the initial sample. Ask for a sample drawn randomly from the actual packed sacks ready for dispatch.
- ✅ The Crunch Test: Immediately test for moisture. Squeeze a piece; it should shatter with a sharp sound, not bend or feel spongy.
- ✅ Check for Uniformity: Take two handfuls and spread them on a table. Do the pieces look mostly the same size, or do you see a wide variance?
Conclusion
In the Makhana business, what you don’t know will cost you money. By understanding the realities of grading and knowing what questions to ask, you can ensure your brand delivers consistent quality to your customers.
Don’t gamble with your inventory. Source directly from the people who grow it, know it, and grade it honestly.
